14. Cilantro-Lime Tacos

Ingredients
- 2 cloves garlic, minced
- ½ cup chopped scallions
- 1 can black beans, drained and rinsed
- 1 (4 oz) can diced green chiles
- 1 ½ cups corn
- 3 tablespoons lime juice
- ½ cup chopped cilantro
- Sea salt & pepper, to taste
- Olive oil, for sautéing
- 1 avocado, sliced
- ¼ cup classic hummus (plus more if needed)
- 4 soft tortillas (brown rice or corn for gluten-free)
Instructions
- In a large pan, heat a drizzle of olive oil over medium heat.
- Add the scallions and garlic, and sauté for 3-4 minutes.
- Add the black beans, green chiles, corn, lime juice, sea salt, and pepper. Mix and sauté for 5 minutes.
- Mix in the chopped cilantro and sauté for a few more minutes until everything is fully heated.
- Warm your tortillas in a separate pan or in the oven.
- Spread hummus over each tortilla.
- Place the cilantro black bean mixture onto the center of each tortilla and garnish with sliced avocado.
