Avocado Quesadillas

Ingredients

  • ½ avocado (more if preferred)
  • 1 small roma tomato, diced
  • 1 green onion, sliced
  • 2 tsp nutritional yeast
  • Seasonings of choice (taco seasoning, smoked paprika, cumin, garlic powder, etc.)
  • Salsa to taste (optional)
  • 1 large tortilla (gluten-free if desired)

Instructions

  1. On one half of the tortilla, smash the avocado with a fork. Sprinkle nutritional yeast and any seasonings on top. Add tomato, green onions, and salsa if using.
  2. Fold the top half of the tortilla over the filling, and place it on a skillet over medium heat.
  3. Heat for a few minutes on each side until warmed through.
