Ingredients

  • 2 very large Fuji apples
  • 3 ½ cups semi-sweet chocolate chips (recommend using Nestlé)
  • 1 tablespoon coconut oil (use refined coconut oil for a neutral flavor)
  • 1 cup caramels (such as Kraft caramels), melted
  • ½ cup chopped pecans
  • Popsicle sticks
  • Parchment paper

Instructions

  1. Begin by washing and drying the apples thoroughly. Slice each apple into ½-inch thick slices. To insert the popsicle sticks more easily, make a small slit at the bottom of each apple slice with a sharp knife. Then, carefully insert a popsicle stick into each slice and set them aside.
  2. In a microwave-safe bowl, combine the semi-sweet chocolate chips and coconut oil. Microwave the mixture on high for about 2 minutes, stirring every 30 seconds until the chocolate is completely melted and smooth.
  3. If the apple slices are very juicy, gently pat them dry with a paper towel to help the chocolate adhere better.
  4. Dip each apple slice into the melted chocolate, allowing any excess chocolate to drip off. Place the chocolate-coated apple slices onto a baking sheet lined with parchment paper.
  5. In a separate microwave-safe bowl, melt the caramels by microwaving them on high for 30 to 60 seconds. Stir every 20 seconds to ensure they melt evenly and do not burn. Once melted, stir until smooth.
  6. Drizzle the melted caramel over the chocolate-covered apple slices. You can use a spoon or a piping bag for more control.
  7. Sprinkle the chopped pecans over the caramel-drizzled apple slices while the caramel is still warm to ensure they stick.
  8. Place the baking sheet in the refrigerator and let the apple slices chill for about 1 hour, or until the chocolate and caramel have set.
  9. Once set, remove from the refrigerator and enjoy immediately. For the best taste and texture, it's recommended to consume these treats the same day they are made. Store any leftovers in the refrigerator.
