For the Muffins:

  • 1 cup peeled and chopped apples
  • ¾ cup granulated sugar
  • 2 ½ cups all-purpose flour
  • 2 ½ teaspoons baking powder
  • 1 teaspoon salt
  • 2 teaspoons cinnamon
  • 2 large eggs
  • 4 tablespoons unsalted butter, melted
  • ¼ cup canola oil
  • 1 cup milk
  • 1 ½ teaspoons pure vanilla extract

For the Glaze:

  • 1 cup powdered sugar
  • 2 tablespoons milk

Instructions

  1. Preheat your oven to 425°F (218°C). Prepare a 12-cup muffin tin by lightly greasing it or lining with paper liners. Set aside.
  2. Prepare the Crumb Topping: In a small bowl, mix together granulated sugar, brown sugar, flour, cinnamon, and a pinch of salt. Pour in the melted butter and stir until the mixture forms clumps. Set aside.
  3. Prepare the Muffin Batter: In a large mixing bowl, combine the flour, baking powder, salt, and cinnamon. Whisk to blend the dry ingredients.
  4. In a separate bowl, whisk together the sugar, eggs, melted butter, and canola oil until well combined. Add the milk and vanilla extract, whisking until the mixture is smooth.
  5. Pour the wet ingredients into the bowl with the dry ingredients. Stir gently until just combined; be careful not to overmix.
