Servings: 6

Ingredients:

  • 1.25 lb ground beef
  • 8 oz tomato paste
  • 1 1/2 tomatoes, chopped
  • 1 red bell pepper, chopped
  • 1/2 cup onion, chopped
  • 2 celery sticks, chopped
  • 1 1/2 teaspoons cumin
  • 1 1/2 teaspoons chili powder
  • 1/2 teaspoon pepper
  • 1 1/2 teaspoons salt
  • 3/4 cup water (add more if needed)

Instructions:

  1. Brown the meat in a fry pan. Once almost finished, drain off the fat and sprinkle 1/2 teaspoon salt over the meat.
  2. Add onions and peppers to the pan and continue to cook for 1-2 minutes.
  3. Combine the cooked meat, onions, peppers, tomatoes, celery, water, and tomato paste in a large pot.
  4. Stir the spices into the pot. Bring to a boil, then reduce heat to low-medium and let simmer for 1-2 hours, stirring every 30 minutes or so.
