Pizza Casserole

Servings: 8 slices

Ingredients:

  • 4 oz cream cheese, softened
  • 4 large eggs
  • 1/3 cup heavy cream
  • 1/4 cup Parmesan cheese, grated
  • 1/2 teaspoon minced garlic
  • 1/2 teaspoon dried oregano
  • 1 cup Parmesan, Asiago, or Romano cheese (any combination can be used)
  • 2 cups mozzarella cheese, shredded and divided
  • 1/2 cup low carb pizza sauce
  • Pizza toppings (optional)

Instructions:

  1. Preheat Oven and Prepare Pan
    1. Preheat your oven to 350 degrees Fahrenheit (175°C).
    2. Grease a 13×9 inch baking pan.
  2. Prepare Egg Mixture
    1. In a food processor or with an electric mixer, combine the softened cream cheese and eggs until smooth.
    2. Add the heavy cream, grated Parmesan, minced garlic, and dried oregano. Blend until the ingredients are well combined.
  3. Assemble the Casserole
    1. Sprinkle the Parmesan, Asiago, or Romano cheese along with 1 cup of shredded mozzarella cheese evenly over the bottom of the greased baking pan.
    2. Pour the egg mixture over the cheese layer.
  4. Bake the Casserole
    1. Bake in the preheated oven for 30 minutes, then remove from the oven.
  5. Add Sauce, Toppings, and Remaining Cheese
    1. Spread the low carb pizza sauce evenly over the baked egg mixture.
    2. Add your desired pizza toppings if using.
    3. Cover with the remaining 1 cup of shredded mozzarella cheese.
  6. Broil and Serve
    1. Using the oven broiler on high, broil the casserole a few inches from the heat elements until the top is brown and bubbly.
    2. Let the casserole sit for a few minutes before cutting into slices.
