23. Pizza Casserole

Servings: 8 slices
Ingredients:
- 4 oz cream cheese, softened
- 4 large eggs
- 1/3 cup heavy cream
- 1/4 cup Parmesan cheese, grated
- 1/2 teaspoon minced garlic
- 1/2 teaspoon dried oregano
- 1 cup Parmesan, Asiago, or Romano cheese (any combination can be used)
- 2 cups mozzarella cheese, shredded and divided
- 1/2 cup low carb pizza sauce
- Pizza toppings (optional)
Instructions:
- Preheat Oven and Prepare Pan
- Preheat your oven to 350 degrees Fahrenheit (175°C).
- Grease a 13×9 inch baking pan.
- Prepare Egg Mixture
- In a food processor or with an electric mixer, combine the softened cream cheese and eggs until smooth.
- Add the heavy cream, grated Parmesan, minced garlic, and dried oregano. Blend until the ingredients are well combined.
- Assemble the Casserole
- Sprinkle the Parmesan, Asiago, or Romano cheese along with 1 cup of shredded mozzarella cheese evenly over the bottom of the greased baking pan.
- Pour the egg mixture over the cheese layer.
- Bake the Casserole
- Bake in the preheated oven for 30 minutes, then remove from the oven.
- Add Sauce, Toppings, and Remaining Cheese
- Spread the low carb pizza sauce evenly over the baked egg mixture.
- Add your desired pizza toppings if using.
- Cover with the remaining 1 cup of shredded mozzarella cheese.
- Broil and Serve
- Using the oven broiler on high, broil the casserole a few inches from the heat elements until the top is brown and bubbly.
- Let the casserole sit for a few minutes before cutting into slices.
