Spinach Stuffed Chicken

Servings: 4

Ingredients:

  • 4 chicken breasts
  • 1 tablespoon olive oil or avocado oil
  • 1 teaspoon paprika
  • 1 teaspoon salt, divided
  • ¼ teaspoon garlic powder
  • ¼ teaspoon onion powder
  • 4 ounces cream cheese, softened
  • ¼ cup grated Parmesan
  • 2 tablespoons mayonnaise
  • 1½ cups chopped fresh spinach
  • 1 teaspoon garlic, minced
  • ½ teaspoon red pepper flakes

Instructions:

  1. Preheat Oven
    1. Preheat your oven to 375 degrees Fahrenheit (190°C).
  2. Prepare Chicken
    1. Place the chicken breasts on a cutting board and drizzle with olive oil or avocado oil.
    2. In a small bowl, combine the paprika, ½ teaspoon salt, garlic powder, and onion powder. Sprinkle the mixture evenly over both sides of the chicken breasts.
    3. Using a sharp knife, carefully cut a pocket into the side of each chicken breast, being cautious not to cut all the way through. Set the chicken aside.
  3. Make Filling
    1. In a small mixing bowl, combine the softened cream cheese, grated Parmesan, mayonnaise, chopped fresh spinach, minced garlic, red pepper flakes, and the remaining ½ teaspoon of salt. Stir well until all ingredients are fully integrated.
  4. Stuff Chicken
    1. Spoon the spinach mixture evenly into each chicken breast pocket.
  5. Bake Chicken
    1. Place the stuffed chicken breasts into a 9×13 inch baking dish.
    2. Bake, uncovered, for 25 minutes or until the chicken is cooked through and reaches an internal temperature of 165 degrees Fahrenheit (74°C).
