21. Taco Casserole

Servings: 6
Ingredients:
- 1 1/2 lb ground beef
- 1 14.5 oz can chopped tomatoes
- 1 4 oz can diced green chiles
- 2 cups cooked cauliflower rice
- 3 Tbs taco seasoning
- 1 8 oz bag taco cheese
Instructions:
- Prepare Cauliflower Rice
- Cook the cauliflower rice according to package instructions (either bagged or fresh).
- Pat dry with a paper towel to remove excess moisture.
- Cook Ground Beef
- In a large skillet, cook the ground beef over medium heat until browned and fully cooked. Drain any excess fat.
- Combine Ingredients
- Add the chopped tomatoes, diced green chiles, cooked cauliflower rice, and taco seasoning to the skillet with the ground beef.
- Stir until all ingredients are well mixed and heated through.
- Assemble the Casserole
- Preheat your oven to 350 degrees Fahrenheit (175°C).
- In a 13 x 9-inch baking dish, layer enough of the beef mixture to cover the bottom - about half of the mixture.
- Sprinkle 2/3 of the taco cheese evenly over the beef layer.
- Repeat with the remaining beef mixture and top with the remaining cheese.
- Bake the Casserole
- Bake in the preheated oven for 15-20 minutes, or until the cheese is melted and bubbly.
- Serve
- Serve the taco casserole in bowls, alone or with your favorite toppings such as sour cream and avocado.
