Servings: 6

Ingredients:

  • 1 1/2 lb ground beef
  • 1 14.5 oz can chopped tomatoes
  • 1 4 oz can diced green chiles
  • 2 cups cooked cauliflower rice
  • 3 Tbs taco seasoning
  • 1 8 oz bag taco cheese

Instructions:

  1. Prepare Cauliflower Rice
    1. Cook the cauliflower rice according to package instructions (either bagged or fresh).
    2. Pat dry with a paper towel to remove excess moisture.
  2. Cook Ground Beef
    1. In a large skillet, cook the ground beef over medium heat until browned and fully cooked. Drain any excess fat.
  3. Combine Ingredients
    1. Add the chopped tomatoes, diced green chiles, cooked cauliflower rice, and taco seasoning to the skillet with the ground beef.
    2. Stir until all ingredients are well mixed and heated through.
  4. Assemble the Casserole
    1. Preheat your oven to 350 degrees Fahrenheit (175°C).
    2. In a 13 x 9-inch baking dish, layer enough of the beef mixture to cover the bottom - about half of the mixture.
    3. Sprinkle 2/3 of the taco cheese evenly over the beef layer.
    4. Repeat with the remaining beef mixture and top with the remaining cheese.
  5. Bake the Casserole
    1. Bake in the preheated oven for 15-20 minutes, or until the cheese is melted and bubbly.
  6. Serve
    1. Serve the taco casserole in bowls, alone or with your favorite toppings such as sour cream and avocado.
