20. Buffalo Stuffed Chicken

Servings: 4
Ingredients:
- 4 boneless skinless chicken breasts, 6 ounces each
- 4 ounces cream cheese, room temperature
- ½ cup grated cheddar cheese
- 1 packet ranch seasoning
- ½ cup buffalo sauce
- 1 tablespoon fresh parsley
- Ranch or blue cheese dressing, for serving
Instructions:
- Preheat Oven
- Preheat your oven to 375 degrees Fahrenheit. Spray a 9x13 inch baking dish with non-stick spray.
- Prepare Chicken
- Place the chicken breasts on a cutting board. Using a sharp knife, carefully cut a pocket into the side of each breast without cutting all the way through.
- Make Filling
- In a small bowl, combine the cream cheese, grated cheddar cheese, and ranch seasoning. Mix well until fully combined.
- Stuff Chicken
- Spoon the cream cheese mixture evenly into each chicken breast pocket.
- Bake Chicken
- Place the stuffed chicken breasts into the prepared baking dish.
- Brush each chicken breast heavily with buffalo sauce.
- Bake in the preheated oven for 25 minutes, brushing with additional buffalo sauce every ten minutes.
- Garnish and Serve
- Once baked, sprinkle freshly chopped parsley over each chicken breast.
- Drizzle with ranch or blue cheese dressing before serving.
