Buffalo Stuffed Chicken

Servings: 4

Ingredients:

  • 4 boneless skinless chicken breasts, 6 ounces each
  • 4 ounces cream cheese, room temperature
  • ½ cup grated cheddar cheese
  • 1 packet ranch seasoning
  • ½ cup buffalo sauce
  • 1 tablespoon fresh parsley
  • Ranch or blue cheese dressing, for serving

Instructions:

  1. Preheat Oven
    1. Preheat your oven to 375 degrees Fahrenheit. Spray a 9x13 inch baking dish with non-stick spray.
  2. Prepare Chicken
    1. Place the chicken breasts on a cutting board. Using a sharp knife, carefully cut a pocket into the side of each breast without cutting all the way through.
  3. Make Filling
    1. In a small bowl, combine the cream cheese, grated cheddar cheese, and ranch seasoning. Mix well until fully combined.
  4. Stuff Chicken
    1. Spoon the cream cheese mixture evenly into each chicken breast pocket.
  5. Bake Chicken
    1. Place the stuffed chicken breasts into the prepared baking dish.
    2. Brush each chicken breast heavily with buffalo sauce.
    3. Bake in the preheated oven for 25 minutes, brushing with additional buffalo sauce every ten minutes.
  6. Garnish and Serve
