19. Sausage Patties

Servings: 8
Ingredients:
- For the Sausage Patties
- 1 pound ground pork (I prefer 85/15)
- 1 teaspoon fennel seeds
- 1 teaspoon dried sage
- 1 teaspoon garlic powder
- 1 teaspoon salt
- 1/4 teaspoon red pepper flakes (or more if you like it spicy)
- 1 tablespoon olive oil
Instructions:
- Prepare the Sausage Patties
- In a small mixing bowl, combine the ground pork and all seasonings. Blend the meat until well combined.
- Use a large cookie scoop to make even-sized 3 tablespoon balls.
- Flatten each ball with your hands until less than 1/2″ thick to form the patties. This should make about 8 patties.
- Cook the Sausage Patties
- Heat a cast iron or heavy-bottom skillet over medium-high heat.
- Add the olive oil to prevent sticking and to help the patties brown.
- Place the patties in the skillet and cook until golden brown on both sides and they reach an internal temperature of 165 degrees, about 5 minutes per side.
- Drain the cooked patties on a paper towel and serve warm.
