Cottage Cheese Parfait with Berries

Servings: 3

Ingredients:

  • 4 1/2 cups of cottage cheese
  • 15 large eggs
  • 1 cup of flour (can substitute almond flour for low carb pancakes)

Instructions:

  1. Combine all ingredients, except berries, in a food processor or blender.
  2. Pulse until smooth and divide between three small bowls.
  3. Top with berries and enjoy!
