17. Shepherd's Pie Recipe with Cauliflower Topping

Ingredients:
- Ground Beef Mixture:
- 1 tbsp olive oil
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 lb ground beef
- 1 small zucchini, diced
- 1 cup crushed tomatoes
- Salt and pepper, to taste
- Cauliflower Topping:
- 1 small cauliflower, cut into florets
- 2 tbsp butter
- 1/2 cup heavy cream
- 1/2 cup shredded cheese
- Salt and pepper, to taste
Instructions:
- Shepherd's Pie: Heat the olive oil in a large saucepan over medium heat. Add the diced onion and minced garlic, and sauté until soft and translucent.
- Add the ground beef to the saucepan and cook, stirring frequently, until browned and cooked through.
- Stir in the diced zucchini and crushed tomatoes. Season with salt and pepper to taste.
- Reduce the heat to a simmer and let the mixture cook uncovered for 10 minutes, allowing the flavors to meld together.
- Cauliflower Topping: In a large pot, bring water to a boil and add the cauliflower florets. Boil until the cauliflower is soft, about 8-10 minutes.
- Drain the cauliflower well, allowing all steam to escape. This helps in achieving a creamier mash.
- Transfer the drained cauliflower to a food processor. Add the butter, heavy cream, shredded cheese, salt, and pepper. Process until smooth and creamy.
- To Assemble: Spread the ground beef mixture evenly in the bottom of a large casserole dish.
- Top the beef mixture with the mashed cauliflower, spreading it out to cover the entire surface.
- Bake in a preheated oven at 350°F (175°C) for 20-25 minutes, or until the filling is bubbly and the topping is lightly browned.
