Shepherd's Pie Recipe with Cauliflower Topping

Ingredients:

  • Ground Beef Mixture:
  • 1 tbsp olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 lb ground beef
  • 1 small zucchini, diced
  • 1 cup crushed tomatoes
  • Salt and pepper, to taste
  • Cauliflower Topping:
  • 1 small cauliflower, cut into florets
  • 2 tbsp butter
  • 1/2 cup heavy cream
  • 1/2 cup shredded cheese
  • Salt and pepper, to taste

Instructions:

  1. Shepherd's Pie: Heat the olive oil in a large saucepan over medium heat. Add the diced onion and minced garlic, and sauté until soft and translucent.
  2. Add the ground beef to the saucepan and cook, stirring frequently, until browned and cooked through.
  3. Stir in the diced zucchini and crushed tomatoes. Season with salt and pepper to taste.
  4. Reduce the heat to a simmer and let the mixture cook uncovered for 10 minutes, allowing the flavors to meld together.
  5. Cauliflower Topping: In a large pot, bring water to a boil and add the cauliflower florets. Boil until the cauliflower is soft, about 8-10 minutes.
  6. Drain the cauliflower well, allowing all steam to escape. This helps in achieving a creamier mash.
  7. Transfer the drained cauliflower to a food processor. Add the butter, heavy cream, shredded cheese, salt, and pepper. Process until smooth and creamy.
  8. To Assemble: Spread the ground beef mixture evenly in the bottom of a large casserole dish.
  9. Top the beef mixture with the mashed cauliflower, spreading it out to cover the entire surface.
  10. Bake in a preheated oven at 350°F (175°C) for 20-25 minutes, or until the filling is bubbly and the topping is lightly browned.
