18. Siracha Cauliflower Fried Rice

Servings: 4
Ingredients:
- 2 tbsp olive oil
- 1 lb chicken breast, cut into bite-sized cubes
- 6 cups cauliflower rice (see note)
- 1 red bell pepper, cut into 1/2 inch squares
- 1 cup green beans, cut into 1-inch long pieces
- 2-3 tbsp low sodium soy sauce
- 1 tbsp sesame oil
- 2 tsp sriracha sauce
- Salt and pepper, to taste
- 1 green scallion, finely sliced
Instructions:
- In a large skillet or pan, add 1 tbsp olive oil and heat over medium heat. Add the chicken cubes and cook until the chicken is just cooked through. For a seared exterior, increase the heat slightly and cook until the chicken is browned on all sides, then reduce the heat back to medium.
- Add the remaining 1 tbsp olive oil to the skillet. Add the cauliflower rice, red bell pepper, and green beans. Stir and cook until the vegetables are halfway cooked.
- Pour in the low sodium soy sauce, sesame oil, and sriracha sauce. Stir well to ensure everything is evenly coated. Continue to cook until the vegetables are tender but still crisp. Adjust the seasoning with salt and pepper as needed.
- Stir in the finely sliced green scallion for a fresh burst of flavor. Cook for an additional few seconds before turning off the heat.
- Divide the Siracha Cauliflower Fried Rice into meal prep containers. Allow the rice to cool before refrigerating or freezing. If desired, add an extra drizzle of sriracha sauce on top before serving. Reheat before eating.
- Note: Using pre-packaged cauliflower rice, such as 365 Organic Riced Cauliflower from Whole Foods, can save time and ensure consistent texture.
