23. Eggless Salmon Patties

Servings: 6
Ingredients:
- 6 tablespoons water
- 2 tablespoons golden flaxseed meal
- 18 oz Wild Pink Salmon (about 3 cans), well drained (see notes)
- ½ cup almond meal
- 1/2 cup fresh parsley, chopped
- 1 shallot, finely chopped
- 1 green onion, sliced
- 1 teaspoon salt
- 1 teaspoon garlic powder
- ½ teaspoon dill
- ¼ teaspoon black pepper
- 2 tablespoons lime juice
- 2 tablespoons olive oil
Instructions:
- In a small bowl, add the flaxseed meal and water. Stir well and let it rest for 5 minutes to thicken.
- Flake the well-drained salmon apart in a medium bowl. Add the almond meal, chopped parsley, finely chopped shallot, sliced green onion, salt, garlic powder, dill, black pepper, lime juice, and the thickened flaxseed mixture. Mix until all ingredients are well incorporated.
- Form the mixture into 6 patties. Using a ½ cup measuring cup can help ensure all patties are the same size.
- Heat the olive oil in a nonstick skillet over medium heat. Once the oil is hot, add the salmon patties.
- Fry the patties for about 4-5 minutes on each side, or until they are golden brown and crispy on the outside.
- Once cooked, remove the patties from the skillet and place them on a plate lined with paper towels to drain any excess oil.
- Serve the Eggless Salmon Patties with cilantro lime cauliflower rice, if desired.
