Cauliflower Fried Rice

Servings: 2

Ingredients

  • 8 teaspoons sesame oil, divided
  • 4 eggs
  • 2 small heads cauliflower (see notes)
  • 1 cup frozen mixed vegetables
  • 4 green onions, chopped
  • 6 cloves garlic, pressed or minced
  • Salt and pepper, to taste
  • 4 - 6 tablespoons gluten-free Tamari (or soy sauce if not gluten-free)

Instructions

  1. Add 1 teaspoon sesame oil and the eggs to a bowl, whisk to combine, and set aside.
  2. Chop cauliflower into large chunks, then process using a food processor with a grating attachment, or use a box grater. Measure out 4 cups of grated cauliflower and save the rest for another use. (Alternatively, you can use 4 cups of frozen cauliflower rice.)
  3. Heat the remaining 3 teaspoons of sesame oil in a wok or large nonstick skillet over high heat. Add the cauliflower, green onions, and frozen mixed vegetables. Stir fry for 3-4 minutes, until the cauliflower is just beginning to turn tender.
  4. Add garlic, season with salt and pepper, and stir fry for another 30 seconds until the garlic is fragrant.
  5. Push the mixture to the sides of the wok, creating an opening in the center. Pour the whisked eggs into the center and scramble them. Toss the mixture to combine with the eggs.
  6. Drizzle 2 tablespoons of gluten-free Tamari over the mixture and toss again to combine. Taste, and add an additional tablespoon of Tamari if desired. Serve immediately.
