Light and Fluffy Vegan Waffles with Blueberry Sauce

Ingredients

For the Waffles:

  • 3 cups white spelt flour (all-purpose flour works, too)
  • 3 tablespoons baking powder
  • ¼ teaspoon salt
  • 6 tablespoons sugar
  • 5 tablespoons lemon juice
  • 1 teaspoon lemon zest
  • 2 teaspoons vanilla extract
  • 6 tablespoons organic canola oil (or melted vegan buttery spread)
  • 2 cups water

For the Blueberry Sauce:

  • 3 cups blueberries (fresh or frozen)
  • 3 tablespoons sugar (or other sweetener of your choice)

Instructions

  1. Preheat your waffle iron.
  2. In a large bowl, whisk together the spelt flour, baking powder, salt, sugar, and lemon zest.
  3. Add the organic canola oil, water, vanilla extract, and lemon juice to the dry ingredients. Stir to combine.
  4. Let the batter sit for a couple of minutes to rise.
  5. Spoon the batter into your preheated waffle iron and cook according to your waffle iron’s instructions.
  6. Repeat with the remaining batter.
  7. Make the blueberry sauce: Place the blueberries in a small pan and add the sugar or sweetener. If the blueberries are already sweet, you may not need as much sugar.
  8. Heat over medium-low heat until the blueberries soften and release their juices. Taste and add more sweetener if needed.
  9. Serve the waffles with vegan buttery spread and the blueberry sauce on top.
