26. Light and Fluffy Vegan Waffles with Blueberry Sauce

Ingredients
For the Waffles:
- 3 cups white spelt flour (all-purpose flour works, too)
- 3 tablespoons baking powder
- ¼ teaspoon salt
- 6 tablespoons sugar
- 5 tablespoons lemon juice
- 1 teaspoon lemon zest
- 2 teaspoons vanilla extract
- 6 tablespoons organic canola oil (or melted vegan buttery spread)
- 2 cups water
For the Blueberry Sauce:
- 3 cups blueberries (fresh or frozen)
- 3 tablespoons sugar (or other sweetener of your choice)
Instructions
- Preheat your waffle iron.
- In a large bowl, whisk together the spelt flour, baking powder, salt, sugar, and lemon zest.
- Add the organic canola oil, water, vanilla extract, and lemon juice to the dry ingredients. Stir to combine.
- Let the batter sit for a couple of minutes to rise.
- Spoon the batter into your preheated waffle iron and cook according to your waffle iron’s instructions.
- Repeat with the remaining batter.
- Make the blueberry sauce: Place the blueberries in a small pan and add the sugar or sweetener. If the blueberries are already sweet, you may not need as much sugar.
- Heat over medium-low heat until the blueberries soften and release their juices. Taste and add more sweetener if needed.
- Serve the waffles with vegan buttery spread and the blueberry sauce on top.
