10. Apple, Cheddar, & Chicken Melts

These Apple, Cheddar, & Chicken Melts are a delightful combination of savory and sweet flavors, perfect for a quick lunch or dinner. The crispness of the apples pairs wonderfully with the melted cheddar and tender chicken, all nestled between slices of sourdough bread. The addition of a fresh apple and Brussels sprouts slaw adds a satisfying crunch to every bite.

Ingredients
- 8 slices of sourdough bread (½-inch thick)
- 4 tablespoons unsalted butter, softened
- 4 teaspoons honey mustard
- 2 ½ cups shredded cooked chicken
- 1 ½ cups grated cheddar cheese
- 1 small Gala apple, cored and cut into matchsticks
- 4 ounces Brussels sprouts (about 5), finely shredded
- 1 tablespoon lemon juice
- Kosher salt, to taste
- Freshly ground black pepper, to taste
Instructions
- Preheat your oven to 450°F (230°C). Place a baking sheet on the middle rack to heat up.
- Spread softened butter evenly on one side of each slice of sourdough bread.
- Flip 4 slices over and spread honey mustard on the unbuttered side.
- Carefully remove the hot baking sheet from the oven using oven mitts. Place all 8 slices of bread, buttered side down, on the baking sheet.
- Top the 4 slices spread with honey mustard with the shredded cooked chicken, dividing it evenly.
- Sprinkle the grated cheddar cheese evenly over the other 4 slices of bread.
- Return the baking sheet to the oven and bake for about 10 minutes, or until the cheese is melted and bubbly.
- Meanwhile, prepare the slaw by combining the apple matchsticks, shredded Brussels sprouts, and lemon juice in a bowl. Season with salt and pepper to taste.
- Remove the baking sheet from the oven. Transfer the chicken-topped slices to a cutting board and top with the apple-Brussels sprouts slaw.
- Place the cheese-topped slices over the slaw to assemble the sandwiches, cheese side down.
- Cut each sandwich in half and serve immediately. Enjoy!
