Apple, Cheddar, & Chicken Melts

These Apple, Cheddar, & Chicken Melts are a delightful combination of savory and sweet flavors, perfect for a quick lunch or dinner. The crispness of the apples pairs wonderfully with the melted cheddar and tender chicken, all nestled between slices of sourdough bread. The addition of a fresh apple and Brussels sprouts slaw adds a satisfying crunch to every bite.

Serves: 4

Ingredients

  • 8 slices of sourdough bread (½-inch thick)
  • 4 tablespoons unsalted butter, softened
  • 4 teaspoons honey mustard
  • 2 ½ cups shredded cooked chicken
  • 1 ½ cups grated cheddar cheese
  • 1 small Gala apple, cored and cut into matchsticks
  • 4 ounces Brussels sprouts (about 5), finely shredded
  • 1 tablespoon lemon juice
  • Kosher salt, to taste
  • Freshly ground black pepper, to taste

Instructions

  1. Preheat your oven to 450°F (230°C). Place a baking sheet on the middle rack to heat up.
  2. Spread softened butter evenly on one side of each slice of sourdough bread.
  3. Flip 4 slices over and spread honey mustard on the unbuttered side.
  4. Carefully remove the hot baking sheet from the oven using oven mitts. Place all 8 slices of bread, buttered side down, on the baking sheet.
  5. Top the 4 slices spread with honey mustard with the shredded cooked chicken, dividing it evenly.
  6. Sprinkle the grated cheddar cheese evenly over the other 4 slices of bread.
  7. Return the baking sheet to the oven and bake for about 10 minutes, or until the cheese is melted and bubbly.
  8. Meanwhile, prepare the slaw by combining the apple matchsticks, shredded Brussels sprouts, and lemon juice in a bowl. Season with salt and pepper to taste.
  9. Remove the baking sheet from the oven. Transfer the chicken-topped slices to a cutting board and top with the apple-Brussels sprouts slaw.
  10. Place the cheese-topped slices over the slaw to assemble the sandwiches, cheese side down.
  11. Cut each sandwich in half and serve immediately. Enjoy!
