Caramel Apple Cobbler

This Caramel Apple Cobbler combines tender, cinnamon-spiced apples with a rich homemade caramel sauce, all baked under a golden, buttery cobbler crust. It's the perfect dessert to warm up any occasion and is best enjoyed fresh out of the oven with a scoop of vanilla ice cream.

Ingredients

For the Apples:
  • 6 apples, peeled and thinly sliced (a mix of Gala and Granny Smith recommended)
  • 1 teaspoon ground cinnamon
  • 2 tablespoons granulated sugar
For the Caramel Sauce:
  • 1 cup packed brown sugar
  • ½ cup unsalted butter
  • ¼ cup heavy cream
For the Cobbler Batter:
  • ½ cup unsalted butter, melted
  • 1 cup granulated sugar
  • 1 cup all-purpose flour
  • 2 teaspoons baking powder
  • ¼ teaspoon salt
  • 1 cup milk
  • 2 teaspoons vanilla extract

Instructions

  1. Preheat your oven to 400°F (200°C). Lightly grease a 9x13-inch baking dish and set aside.
  2. In a large saucepan over medium-low heat, combine the sliced apples, cinnamon, and 2 tablespoons of sugar. Cook for about 10 minutes, stirring occasionally, until the apples soften.
  3. While the apples are cooking, prepare the caramel sauce. In a separate saucepan over medium heat, mix together the brown sugar, ½ cup unsalted butter, and heavy cream. Stir continuously until the mixture comes to a boil. Let it boil for an additional minute while stirring, then remove from heat.
  4. Pour the melted butter for the batter into the prepared baking dish, spreading it evenly over the bottom.
  5. In a mixing bowl, whisk together the granulated sugar, all-purpose flour, baking powder, and salt. Gradually add the milk and vanilla extract, whisking until the batter is smooth.
  6. Pour the batter over the melted butter in the baking dish. Do not stir; allow the batter to distribute itself over the butter.
  7. Add about 1 cup of the prepared caramel sauce to the softened apples, stirring to coat them well. Reserve the remaining caramel sauce for serving.
  8. Spoon the caramel-coated apples evenly over the batter in the baking dish.
  9. Bake in the preheated oven for 20-25 minutes, or until the edges of the cobbler are golden brown and the batter is set.
  10. Remove from the oven and let it cool slightly. Serve warm, topped with a scoop of vanilla ice cream and a drizzle of the reserved caramel sauce.
