11. Caramel Apple Cobbler

This Caramel Apple Cobbler combines tender, cinnamon-spiced apples with a rich homemade caramel sauce, all baked under a golden, buttery cobbler crust. It's the perfect dessert to warm up any occasion and is best enjoyed fresh out of the oven with a scoop of vanilla ice cream.

Ingredients
For the Apples:
- 6 apples, peeled and thinly sliced (a mix of Gala and Granny Smith recommended)
- 1 teaspoon ground cinnamon
- 2 tablespoons granulated sugar
For the Caramel Sauce:
- 1 cup packed brown sugar
- ½ cup unsalted butter
- ¼ cup heavy cream
For the Cobbler Batter:
- ½ cup unsalted butter, melted
- 1 cup granulated sugar
- 1 cup all-purpose flour
- 2 teaspoons baking powder
- ¼ teaspoon salt
- 1 cup milk
- 2 teaspoons vanilla extract
Instructions
- Preheat your oven to 400°F (200°C). Lightly grease a 9x13-inch baking dish and set aside.
- In a large saucepan over medium-low heat, combine the sliced apples, cinnamon, and 2 tablespoons of sugar. Cook for about 10 minutes, stirring occasionally, until the apples soften.
- While the apples are cooking, prepare the caramel sauce. In a separate saucepan over medium heat, mix together the brown sugar, ½ cup unsalted butter, and heavy cream. Stir continuously until the mixture comes to a boil. Let it boil for an additional minute while stirring, then remove from heat.
- Pour the melted butter for the batter into the prepared baking dish, spreading it evenly over the bottom.
- In a mixing bowl, whisk together the granulated sugar, all-purpose flour, baking powder, and salt. Gradually add the milk and vanilla extract, whisking until the batter is smooth.
- Pour the batter over the melted butter in the baking dish. Do not stir; allow the batter to distribute itself over the butter.
- Add about 1 cup of the prepared caramel sauce to the softened apples, stirring to coat them well. Reserve the remaining caramel sauce for serving.
- Spoon the caramel-coated apples evenly over the batter in the baking dish.
- Bake in the preheated oven for 20-25 minutes, or until the edges of the cobbler are golden brown and the batter is set.
- Remove from the oven and let it cool slightly. Serve warm, topped with a scoop of vanilla ice cream and a drizzle of the reserved caramel sauce.
