12. Apple Pie Enchiladas

These Apple Pie Enchiladas offer all the warm, cinnamon flavors of traditional apple pie wrapped in a soft tortilla and drizzled with a rich caramel sauce. It's a delightful dessert that's easy to make and perfect for satisfying your sweet tooth.

Ingredients
- 1 batch of homemade apple pie filling or 1 (21-ounce) can of apple pie filling
- 6 (8-inch) flour tortillas
- 1 teaspoon ground cinnamon
- ½ cup unsalted butter
- ½ cup granulated sugar
- ½ cup brown sugar
- ½ cup water
- Caramel sauce, for drizzling (optional)
- Vanilla ice cream or whipped cream, for serving (optional)
Instructions
- Preheat your oven to 350°F (175°C). Lightly butter a 9x13-inch baking dish and set aside.
- If your tortillas are stiff, warm them in the microwave for about 15 seconds to make them more pliable.
- Spoon approximately a heaping ¼ cup of apple pie filling onto each tortilla, placing it slightly off-center. Sprinkle a pinch of ground cinnamon over the filling.
- Roll up each tortilla tightly, folding in the sides if desired, and place them seam-side down in the prepared baking dish.
- In a medium saucepan over medium heat, combine the unsalted butter, granulated sugar, brown sugar, and water. Bring the mixture to a boil, stirring constantly. Reduce the heat and let it simmer for about 3 minutes until the sugars are fully dissolved and the sauce is smooth.
- Pour the hot sauce evenly over the enchiladas in the baking dish. If you like extra cinnamon flavor, you can sprinkle a bit more over the top.
- Allow the enchiladas to rest for about 45 minutes. This lets the tortillas absorb some of the sauce for better flavor.
- After resting, bake the enchiladas in the preheated oven for 20 minutes or until they are golden brown and the sauce is bubbly.
- Remove from the oven and let them cool slightly. Serve warm with a scoop of vanilla ice cream or a dollop of whipped cream, and drizzle with caramel sauce if desired.
