These Apple Pie Enchiladas offer all the warm, cinnamon flavors of traditional apple pie wrapped in a soft tortilla and drizzled with a rich caramel sauce. It's a delightful dessert that's easy to make and perfect for satisfying your sweet tooth.

Ingredients

  • 1 batch of homemade apple pie filling or 1 (21-ounce) can of apple pie filling
  • 6 (8-inch) flour tortillas
  • 1 teaspoon ground cinnamon
  • ½ cup unsalted butter
  • ½ cup granulated sugar
  • ½ cup brown sugar
  • ½ cup water
  • Caramel sauce, for drizzling (optional)
  • Vanilla ice cream or whipped cream, for serving (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Lightly butter a 9x13-inch baking dish and set aside.
  2. If your tortillas are stiff, warm them in the microwave for about 15 seconds to make them more pliable.
  3. Spoon approximately a heaping ¼ cup of apple pie filling onto each tortilla, placing it slightly off-center. Sprinkle a pinch of ground cinnamon over the filling.
  4. Roll up each tortilla tightly, folding in the sides if desired, and place them seam-side down in the prepared baking dish.
  5. In a medium saucepan over medium heat, combine the unsalted butter, granulated sugar, brown sugar, and water. Bring the mixture to a boil, stirring constantly. Reduce the heat and let it simmer for about 3 minutes until the sugars are fully dissolved and the sauce is smooth.
  6. Pour the hot sauce evenly over the enchiladas in the baking dish. If you like extra cinnamon flavor, you can sprinkle a bit more over the top.
  7. Allow the enchiladas to rest for about 45 minutes. This lets the tortillas absorb some of the sauce for better flavor.
  8. After resting, bake the enchiladas in the preheated oven for 20 minutes or until they are golden brown and the sauce is bubbly.
  9. Remove from the oven and let them cool slightly. Serve warm with a scoop of vanilla ice cream or a dollop of whipped cream, and drizzle with caramel sauce if desired.
