20. Taco Stuffed Avocados

Servings: 6
Ingredients:
- 1 pound ground beef
- 1 tablespoon Chili Powder
- ½ teaspoon Salt
- ¾ teaspoon Cumin
- ½ teaspoon Dried Oregano
- ¼ teaspoon Garlic Powder
- ¼ teaspoon Onion Powder
- 4 ounces tomato sauce
- 3 avocados, halved
- 1 cup shredded cheddar cheese
- ¼ cup cherry tomatoes, sliced
- ¼ cup lettuce, shredded
- Additional Toppings:
- Cilantro
- Sour Cream
Instructions:
- Taco Meat: In a medium-sized saucepan, add the ground beef and cook over medium heat until browned.
- Drain the grease and add the chili powder, salt, cumin, dried oregano, garlic powder, and onion powder. Stir to combine.
- Pour in the tomato sauce and stir until well mixed. Cook for about 3-4 minutes until heated through.
- Prepare Avocados: Remove the pits from the halved avocados.
- Spoon the taco meat mixture into the crater left by the pit of each avocado half. Fill generously.
- Top each stuffed avocado with shredded cheddar cheese, sliced cherry tomatoes, and shredded lettuce.
- Add additional toppings such as cilantro and a dollop of sour cream as desired.
- Optional: If you prefer a larger area for toppings, spoon out some of the avocado flesh and set aside to make guacamole. Fill the avocado halves with the taco meat and toppings.
