Taco Stuffed Avocados

Servings: 6

Ingredients:

  • 1 pound ground beef
  • 1 tablespoon Chili Powder
  • ½ teaspoon Salt
  • ¾ teaspoon Cumin
  • ½ teaspoon Dried Oregano
  • ¼ teaspoon Garlic Powder
  • ¼ teaspoon Onion Powder
  • 4 ounces tomato sauce
  • 3 avocados, halved
  • 1 cup shredded cheddar cheese
  • ¼ cup cherry tomatoes, sliced
  • ¼ cup lettuce, shredded
  • Additional Toppings:
  • Cilantro
  • Sour Cream

Instructions:

  1. Taco Meat: In a medium-sized saucepan, add the ground beef and cook over medium heat until browned.
  2. Drain the grease and add the chili powder, salt, cumin, dried oregano, garlic powder, and onion powder. Stir to combine.
  3. Pour in the tomato sauce and stir until well mixed. Cook for about 3-4 minutes until heated through.
  4. Prepare Avocados: Remove the pits from the halved avocados.
  5. Spoon the taco meat mixture into the crater left by the pit of each avocado half. Fill generously.
  6. Top each stuffed avocado with shredded cheddar cheese, sliced cherry tomatoes, and shredded lettuce.
  7. Add additional toppings such as cilantro and a dollop of sour cream as desired.
  8. Optional: If you prefer a larger area for toppings, spoon out some of the avocado flesh and set aside to make guacamole. Fill the avocado halves with the taco meat and toppings.
