7. Lemon Rice with Broccoli
This **Lemon Rice with Broccoli** is a perfect, refreshing dish with tangy flavors of lemon, balanced with the earthy taste of broccoli. This recipe is quick and easy, perfect for any meal of the day, and packed with nutrients.

Ingredients
- 3 cups rice
- 4 teaspoons virgin olive oil
- 2 medium onions, chopped
- 4 dry red chilies
- Salt, as required
- 500 gm broccoli
- 1 teaspoon cumin seeds
- 8 cloves garlic, chopped
- ½ teaspoon turmeric powder
- ½ cup lemon juice
Instructions
- Start by cooking rice in a pressure cooker for around 5 minutes. Cook until the water is absorbed and the rice blossoms. Once cooked, put them in a large bowl and keep them aside.
- Meanwhile, wash broccoli in running water and chop it. Then, chop onions and mince the garlic cloves separately.
- Heat oil in a non-stick pan on medium flame. When the oil is heated, add cumin seeds and cook until they sputter. Now, add onions and garlic.
- Stir fry until the onions are translucent and tender. Add dry red chilies and toss them well. Stir fry for another minute.
- Add turmeric powder and sprinkle salt over the onions. Add washed broccoli florets and cook them on medium flame, mixing well while cooking.
- If it gets dry, sprinkle a little water and continue cooking on medium flame, being careful not to burn the broccoli. Once cooked, add lemon juice and mix it well with the broccoli florets.
- Remove the cooked broccoli from the stove and combine it with the cooked rice. Adjust salt and lemon juice according to taste preferences. Serve while warm.
